Lemon Baked Cod

What a weekend it has been! I just got back from Simcoe where I was at the Gentleman on the Road festival. The weather was absolutely fantastic. Now its back to reality with almost a week till school starts back up again. I haven’t shared a lot of my favourite fish recipes and I think that’s about to change. This lemon baked cod is a simple, fast, and delicious summer dish. A perfect accompaniment with a rice pilaf and fresh spinach that has been lightly seared in olive oil and garlic… I’m salivating just thinking about it!


Lemon Baked Cod
Serves: 4
  • 2 tablespoons olive oil
  • 1 tablespoon garlic power
  • Sprinkle of salt and pepper
  • 1 tablespoon butter
  • ½ sleeve crackers, crushed
  • 2 tablespoons butter
  • 1 pound thick-cut cod loin
  • ½ lemon, juiced
  • ¼ cup dry white wine
  • 1 tablespoon chopped fresh parsley
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Coat both sides of cod in 2 tablespoons olive oil. Then with garlic powder and a bit of salt and pepper.
  3. Sprinkle crushed crackers on top with a few cut up pieces of butter (evenly spread)
  4. Bake cod in the preheated oven for 10 minutes. Remove from oven; top with lemon juice, and wine. Place back in oven and bake until fish is opaque and flakes easily with a fork, about 5-8 more minutes.
  5. Garnish baked cod with parsley.
